Well that won't happen when firing full-auto with open bolts, you'll just keep the trigger squeezed until it stops firing and then the bolt will be forward already, you'll need to lock it back before firing.

True. But full auto is rarly used on anything but ARs.
On German Army trainings when playing insurgents we were issued old MP2s (1950s made Uzis with wooden stocks) with blanks. Even then we were supposed to use semi auto only. I used them in hipfire so I could always see if there were rounds left in the mag. That allowed for 2s reloads. But then again that was just roleplaying.

I'm no soldier but from what I've read and learned overtime is that when you fire bullet #29 (on a 30 round magazine), it will pull the last one from the mag thus leaving it empty and with one bullet in the chamber. If you shoot that last one, the rifle/pistol will attempt to pull the next round but will lock back the bolt catch since there are none left in the mag. From here you reload a new mag and press/pull the bolt catch release and it feeds a new round in.
As long as you have rounds left in the mag, the bolt catch won't lock since it has more to "feed on".

There are different principles how a gun can work. I guess its all explained on wikipedia if you want to learn more. In general what you say is true for assault rifles and pistols. Other guns work differently.
I hope they make the animations look a little more like acting under stress.
